Training Co-ordinator - Hospitality and Catering
My passion for cooking came to me whilst I was still in school, I spent my weekends working in local pubs learning traditional, simple, and honest foods. My summers were spent in very busy holiday resort kitchens, and this is where I got my first taste of large-scale catering operations made up of various teams all coming together for one purpose; to give the customer the best experience they possibly could! The ethos and team spirit enthralled me, but I wanted more! I wanted to perfect my culinary arts and aim higher.
Twenty-two years ago, I enrolled onto a professional cookery course at college, and I haven't looked back since. The study programme gave me the skills and knowledge I needed to start my career as a commis chef in a professional kitchen. The work placements and extra opportunities I had whilst studying gave me the behaviours and traits I needed to succeed working in hospitality.
After I completed my training, I took the advantages of being a chef and travelled around the UK from the Lake District to the shores of Cornwall. I enjoyed my employment in large hotels, fine dining restaurants, banqueting and country retreats as a head chef or demi-chef.
Throughout my career, one thing has always been apparent - I had a passion for training new team members. I was always very comfortable and patient whilst passing on my many years of knowledge and skills and this was crucial to be a successful kitchen/restaurant. Therefore, I am where I am today! My role of Training Coordinator allows me to train the newcomers to the hospitality and catering industry, whether they are full time learners, or apprentices. My passions stay the same and my expectations for my learners stay high. I aim for all my learners to succeed and do their best and the team here at Weston College help me achieve this every day!
