Develop your passion for food and hospitality with this hands-on course that dives deep into the technical side of professional cookery. You’ll master essential skills in menu planning, costing, and food hygiene while learning to prepare everything from poultry and pasta to pastries and bread.
Alongside your kitchen training, you’ll gain valuable front-of-house and Barista experience through live restaurant service and large-scale events, preparing you for real industry environments.
What will I study?
This course explores the technical elements of cooking at a deeper level Learners will explore:
- Food hygiene
- Menu planning and costing
- Employment and sector awareness
- Technical cookery skills such as poultry, offal, fruit and vegetables, pasta, stocks and sauces, desserts, pastry, bread and more
- Learners will also gain a Barista qualification through front of housework in our training restaurant and through large scale events which we host
How will you be assessed?
- Learners will have a food hygiene theory examination which they must pass before they start in a live kitchen environment
- Learners will also have a craft assessment in all practical skills and a six-hour graded practical exam which concludes the course
Entry Requirements
- A minimum of maths and English at GCSE grade 3 or above and/or functional skills level 1 Maths and English expectation of study until GCSE grade 4 has been achieved – this is 3 hours of English and 3 hours of maths per week (where appropriate) on top of core timetable
Progression
- Learners on this course would be advised to study level 3 after completion of this course
Uniform Information
- There are strict uniform requirements for hospitality courses, uniform includes chef whites, safety shoes and a front of house uniform
- There is a kit required for this course which is between £200-£300. Therefore, learners should be sure that this is the area that they would like to study
- Included in descriptions. Kit and Uniform links will be provided during enrolment, but learners must know that a bursary application and/or a £100 deposit will be required prior to week one on programme. Without these learners will not be able to remain on course

- Farm to Fork at Puxton Park – Level 1 and 2
- Foraging and Cookery Class – Level 3 – Pony and Trap ##Timetable
- Completely variable, usually 3 or 4 days per week, can include an evening at level 2 (on a rota basis) and once weekly at level 3, usually a Tues evening
